Your company is Vancouver Island’s rhythmic connection with the Pacific Ocean. The colourful, sensitive seabed beneath you. The ocean at low tide, glistening like crystal. The pure marine air and open sky. The calm rustling of evergreens in the breeze. The Olympic Mountains in the distance, and the majestic Pacific displays its deepest blue. Shore crabs scurrying around, luscious seaweed gardens, resident eagles in old growth trees reside overhead, playful otters hang out while lazy seals sunbath on rolling rocks and heron fish nearby. All connected while you dine on the exquisite tastes of artisan craft and culinary mastery, unbound by confinement, experiencing what is plentiful in this magnificently beautiful part of the world; both on land and at sea.
Prepare yourself for a seafood feast
Quaint Victoria gives way to quieter neighborhoods as your luxurious limo takes you along lush rain forest-lined highways on your way to the Oceanside town of Sooke, BC. Greeted by a local marine biologist, you’ll learn the art of seaweed harvesting before venturing to dig for clams. At noon, your appetite heightened by the fresh air, you’ll enjoy an Ocean bed seafood extravaganza prepared by award-winning Executive Chef Shirley Lang. Sterling silver, china and crystal atop white linen. Chef Shirley’s delectable sea harvest lunch will be served to you on tables set right on the ocean floor while the tide is out. The dining experience will be on the sandy mud flats area where it won’t harm or damage the sensitive intertidal zone and, at the right times, the tide could come up close to your table by the end of the meal. After your feast, you’ll imbibe in treasured Island spirits, wines and beers as you visit Sheringham Distillery, Tugwell Creek Honey Farm & Meadery and Sooke Brewing Company. Before leaving the Sooke area we will visit Salt West, a salt harvestry, started by a young, entrepreneurial husband and wife team who harvest sea salt from the rugged pristine waters on the West Coast of Vancouver Island and produced by hand to ensure the highest quality. Having truly experienced Vancouver Island, you’ll return to the Fairmont Empress in time for dinner.

This tour is date-specific and must be pre-booked at least one week in advance.
Experience includes: Host, guided ocean walk & forage with Marine Biologist, lunch, tastings, transportation. Minimum of 6 guests, maximum of 8 guests.
Optional dinner: Purchase items along the way to have Executive Chef Shirley Lang of Kitchens of Distinction Culinary Arts create a unique delicious dinner for you and your guests. Fees will vary depending upon menu requested.
