Walk among giants

Hemlock, Spruce, Fir and Cedar trees, the towering giants of the Pacific Northwest, host with them the most fertile soil beneath their canopy. Ethno ecologists study these fertile soils and have expansive knowledge of the edible and medicinal plants that grow within. The pure air and scent of evergreen will follow you throughout your walk with the Ethnoecologist as you explore. You will witness culinary mastery after your tour as these edible plants will be intricately used in each of your dishes. The sense and feeling of the forest will accompany you to a local brewery where crisp craft beer flavours will mesh perfectly with the flavours of the forest.

Forest Exploration

When you go on a luxury Eco Edible Tour, there is no one better to travel with than an Ethnoecologist and an Executive Chef of Aboriginal ancestry, with deep connections to the forest and the knowledge to create a sumptuous feast from the forest’s treasures. You begin your morning with a freshly brewed coffee or tea, and Executive Chef Shirley Lang’s warm, fresh, out-of-the-oven Raven Spirit Cree Bannock. Prepare to be fascinated as you travel to the forest in a luxury limousine, then led by an Ethnoecologist on an exploration of the forest to learn about unique edible and medicinal plants. Following our tour, we will enjoy a lunch lovingly prepared with the bounty harvested from the forest as you see each ingredient sumptuously combined by Chef Shirley. Your final stop at Sooke Oceanside Brewery to enjoy a craft beer tasting. You will love their beers; they are a labour of love derived from years of recipe development to deliver the excellence of their craft.
